Since its highly publicized 2017 launch, Barry Callebaut’s ruby chocolate has made its appearance in a handful of products, with some high-profile products making their debuts for Valentine’s Day this year, including on Trader Joe’s shelves. Callebaut touts pink chocolate’s fruity notes, “natural” cred, and, of course, its unusual color.

Reddish hues are not a new goal. Cargill has been marketing cocoa powder distinguished with what the company describes as an “intense dark” and “exceptional” red color. More recently, Cargill filed a patent on a method to “naturally” enhance the colors of powder. The filing singled out reds but also mentioned that yellows could also be achieved, reported Food Navigator.
